CoLab: Shared Transformation Lab in San Vito dei Normanni
The CoLab project arises from the need to develop the multifunctionality of the agricultural enterprise and provide the local area with a small production and training infrastructure useful for the transformation and enhancement of local sustainable food products, as well as for building new skills in the agri-food sector. This is achieved through the rediscovery, recovery, and transformation of fruits and herbs from the Mediterranean tradition.
OBJECTIVES
The objectives of CoLab are:
- Promote social agriculture, generate value, and create quality jobs.
- Gradually internalize part of the company’s production processes in order to generate value and work.
- Diversify company production, focusing on market niches interested in high ethical, social, and environmental value agri-food products.
- Provide an appropriate space for the conservation, bottling, and labeling of extra virgin olive oil already produced, as well as other products.
- Equip the local community with a new infrastructure on a confiscated public asset as a symbol of civil economy and as a service for community and productive purposes.
- Promote forms of multifunctional agriculture, integrating the social, cultural, educational, and tourism dimensions with production aspects.
- Offer training and raise awareness about healthy, organic, and local food.
In the summer of 2024, the first transformations of products will begin using our raw materials (vegetables, eggs, olives, grapes, various fruits):
- Salted, olive-oiled, and vinegar-preserved products
- Jams
- Juices
- Tomato purée
- Sauces
- Pickled vegetables/olives
The CoLab project was made possible thanks to the Fondo Carta Etica of UniCredit, funded by the ethical cards of the bank, which allocate two per thousand of customers’ expenses to this specific fund. The available funds are directed to various solidarity initiatives and projects.
