Manifesto is our extra virgin olive oil, produced from the 12,000 olive trees we take care of.

We have reclaimed 35 hectares of olive groves from abandonment through soil regeneration practices, polyconic vase pruning, and organic treatments on the plants.

The olives are harvested directly from the trees, starting in October, following the ripening stage to ensure the quality of Manifesto oil.

The milling process begins within 24 hours of harvest to prevent fermentation and oxidation.

Here are the milling operations used to produce Manifesto extra virgin olive oil:

– Defoliation: leaves and twigs are separated from the olives using suction machines and sieves to avoid leaf and wood flavors;
– Washing: soil traces are removed from the olives to eliminate dirt and earth flavors;
– Crushing: the pulp, pit, and skin of the olives are broken down into a paste using mechanical action, while maintaining the organoleptic properties of the raw material;
– Malaxation: the olive paste is gently agitated at a constant temperature of 24-27°C, promoting oil droplet aggregation for easier separation by centrifugation;
– Extraction: using a continuous two-phase centrifugation process without water addition, the extra virgin olive oil is extracted, rich in aromatic and phenolic substances;
– Filtering: the oil is filtered through cellulose fibers at low pressure to remove solid residues and water nanoparticles that could alter the oil’s aroma and chemical properties over time;
– Storage and bottling: the clear oil, free from solid particles, is stored in steel silos saturated with gas to remove oxygen and slow down oxidation. The oil is then bottled in dark glass bottles and cans to preserve its flavor and physical-chemical qualities.

Manifesto extra virgin olive oil is milled and packaged at the Santoro Mill in San Michele Salentino.
